Light and Crispy Paleo Waffles with Blueberry Syrup

These waffles will bring the perfect crispy, sweet satisfaction to your morning breakfast or brunch. Paleo, gluten and dairy free. Pair with this blueberry syrup for a delicious fruity twist!

Ingredients
  

Waffles
  • 1 3/4 cups Cassava flour
  • 2 cups Almond milk
  • 1/3 cup Avocado oil
  • 1/4 tsp salt
  • 1 Tbsp Baking powder
  • 1 Tbsp Coconut sugar (optional)
Blueberry Syrup
  • 2 cups Blueberries
  • 1 cup Water
  • 1 cup coconut sugar
  • 1 tsp Vanilla extract
  • 1 tsp Maple extract
  • 1 tsp Lemon juice (optional)

Method
 

Syrup
  1. Add blueberries and water to a small sauce pan. Cook on medium heat for 10-15 minutes until blueberries are cooked down.
  2. Stir in coconut sugar and continue to cook for another 5-10 minutes until sugar is completely dissolved and sauce is a syrup consistency.
  3. Before removing from heat stir in extract and cook for another minute.
Waffles
  1. Preheat waffle iron.
  2. Whisk all ingredients together in a medium sized bowl until batter is smooth.
  3. Cook waffles according to your iron's instructions.
