General Tso's Chicken

Craving Chinese takeout? Make this delicious Paleo and Whole30 version of General Tso's chicken!

Ingredients
  

Sauce
  • 1/2 cup coconut amios
  • 1/8 cup Balsamic vinegar
  • 1/8 cup Rice vinegar
  • 2 TBSP chili oil, sub: 2 tsp crushed red pepper
  • 4 cloves garlic minced
  • 1/2 tsp ginger
  • 8 Small, dried thai chilis, halved
Chicken
  • 2 lbs Chicken cubed in 1" pieces
  • 1 Egg beaten
  • 1 cup Almond flour
  • 1/2 cup Arrowroot Starch
  • 1/2 cup Avocado oil for frying

Method
 

Sauce
  1. Combine all ingredients into a small sauce pan and place on the stove on medium heat.
  2. Cook sauce, stirring regularly until it has reduced by 1/2. Then remove from heat and set aside.
Chicken
  1. Cube chicken into 1" pieces and place in a large mixing bowl.
  2. Add 1 egg, beaten to chicken and toss to coat. Drain any excess egg from chicken mixture.
  3. In a separate bowl, add almond flour and tapioca starch, mixing until evenly combined.
  4. Add flour to chicken and egg mixture and toss until evenly coated.
  5. In a large skillet on medium/high heat add avocado oil. Once the oil hot, but not smoking, add chicken in a single layer. Cook chicken until golden brown then flip and cook until the internal temperature reaches 165F and breading is golden on both sides.
  6. Repeat the above step until all the chicken is cooked. Add additional oil as needed
Air Fryer Method
  1. Set air fryer to 400F and set timer to 35 minutes. Allow to preheat for 3 minutes.
  2. Spray the bottom of the air fryer with avocado oil. Place chicken in a single layer. Spray the top of the chicken with avocado oil
  3. Cook for approximately 11 minutes, shaking half way through.
  4. Remove chicken and repeat the above two steps until all the chicken is cooked through and golden brown.
Finish
  1. Toss chicken and sauce together and serve with cauliflower rice or side of your choice. Optional: garnish with green onion and sesame seeds.
